Better default conky theme

As per the title I am aiming to investigate a much nicer conky default, I have a short list, but it depends on asking people nicely to license there work, if I have to create something from scratch it probably won't happen this hackweek.

Now that themes such as Polycore are licensed so they are useable the aim is to build from there.

In a previous hackweek and after we got cairo rendering text better, but that PR still needs updates this hackweek PR Here

I have also started work on a new config based off polycore it is currently in the dev branch of this repo

The current work is looking good as can be seen below, but the code needs some further tidy up and the docs need to be regenerated then it needs to be pushed to the main branch.

      Since Last Hack Week Good progress has been made in https://github.com/simotek/conky-bubblesbut not all of it is pushed to git right and upstreamed so there is a bunch of work to do here. Followed by then working on a better default config.

      The first and most important changes are the ones that need to go into the lua bindings of conky itself, these now have updated PR's * https://github.com/brndnmtthws/conky/pull/1501
